BLECH!

My tiny DD has gotten the cooking bug lately. She has been loving anything that has to do with food for a good long while now and her play kitchen just doesn't cut it anymore I guess. Last week she got SO excited to help me make something for the first time. It was macaroni salad. She had fun being the little chef, eating things off of the cutting board. I was cooking and baking when I was around four, so two is really kind of early. LOL

We have a few kids cook books but nothing easy enough for her to do with limited skills so I went looking around. I could not believe that I actually found a recipe for a candy corn pizza thing. UGH! You're supposed to make some brownies in a pizza pan, smear it with chocolate frosting, and top it with chopped nust and candy corn. I seriously don't know who would want to eat that...I don't even want to eat those at Halloween.

With Easter coming up I thought I'd post a fun recipe that everyone can do each week or so until then. So, with that said, here's recipe #1 (extremely easy in honor of DD).

Easter Scene Cupcakes

-pre-made cupcakes or mix
-homemade or store bought frosting
-green food coloring
-shredded coconut
-bunny or chick Peeps marshmallows
-jellybeans

If using mix or homemade cupcake batter, have the little one help you stir. Bake as directed.

In a ziploc bag, toss the coconut in a tiny bit of coloring until well blended. This is your grass.

Frost your cupcakes and place some of your coconut grass where you'd like. Cut the bottom of your bunny to stand it up and place it. If using chicks, no need to cut.

Decorate with jellybeans for your eggs.
